Saturday Brunch – sweetcorn pancakes and guacamole · 1kg of defrosted corn · 1 bunch of spring onion-sliced then washed · 1 bunch of coriander chopped · 1 each red pepper deseeded and diced · 1 cups of finely ground polenta · ½ Tbsp baking powder · 125ml of oat milk – or any plant milk · 1 tsp sea salt · ½ tsp freshly ground black pepper · 1 birds eye chili washed deseeded and minced (optional) Place half the sweetcorn in a large bowl with the spring onions, coriander, red pepper, and polenta Place the other half of the sweetcorn in a blender with the baking powder, oat milk and salt and pepper and blitz till smooth and a little frothy Mix the wet ingredients into the vegetables and polenta and combine Add chili if using Always fry off one to check for seasoning. This vegan restaurant and bar’s ethos is to ‘spoil yourself without spoiling yourself’ which they’ve achieved with their balance of a comfortable and lively atmosphere combined with nutritional meals and alcohol-free drinks.

Share a mezze plate or antipasti board with friends or indulge in a wild mushroom risotto dusted with roasted cashew parmesan, accompanied with a kombucha or apple mockjito and you’ll walk out feeling well-fed yet smug that it’s in a straight line.
